Tangy Orange Salad

4 oranges

1 white onion

1/4 cup dates

2 tblspns white vinegar

2 tspns vegetable oil

1 tblspn honey

1/2 lettuce, or 1 bunch watercress or spinach


Peel the oranges and cut them into segments. Peel and finely chop onion. Chop the dates. Mix vinegar, oil and honey in a bowl. Add oranges and onion, allow to stand 30 minutes (optional). Drain the orange and onions and keep liquid as the dressing. Tear the lettuce into small pieces. Mix with oranges and add dates. Just before serving add the dressing.
