3 large potatoes, peeled and roughly chopped
2 egg equivalent
1 onion, roughly chopped
2 tablespoons Loprofin Flour
pepper to taste
oil for shallow frying
Place potatoes, egg equivalent, onion, flour and pepper in a food processor or blender. Process until finely chopped and combined.
Heat oil in a large frying pan over a medium heat. Cook tablespoonfuls of the mixture in oil for 2 to 3 minutes each side or until golden. Drain on kitchen paper and serve immediately.
NOTE: Add some finely chopped herbs of your choice. The potato fritters may also be cooked on a well-oiled barbeque plate.
