Sweet Potato Soup

1 tblspn oil

2 onion, chopped

2 clove garlic, crushed (optional)

4 sweet potatoes (kumera), peeled and roughly chopped

6 cups water

seasonings to taste

1 tblspn brown sugar

fresh parsley, chopped


Heat oil in a large saucepan. Saute onion and garlic until onion is tender. Add sweet potato. Cook, stirring, for 1 minute. Pour water over mixture. Stir in seasonings.

Bring to the boil. Simmer, covered, until sweet potatoes are very tender. Reserving a few chunks, puree remaining mixture using a food processor or hand blender. Blend in sugar. Reheat, stirring in chunks of sweet potato. Serve sprinkled with parsley.
