Quick Pumpkin Soup

1 tablespoon oil

1 medium butternut pumpkin, seeds removed, peeled and roughly chopped

1 leek, trimmed, washed and sliced

vegetable stock, cream, seasonings to taste and chives

 

Place oil in a large microwave-safe bowl. Toss in pumpkin and leek. Cover with Microwave Wrap. Cook on High (100%) power for 7 to 10 minutes or until very tender.

Puree with a hand blender or in a food processor until smooth. Stir in enough stock and cream to achieve the desired consistency. Season to taste, topped with chives.
