Pumpkin Wedges

1kg pumpkin, seeded and peeled

oil for deep frying

1/2 cup sweet chilli sauce

Cut pumpkin into small chunky wedges. Heat oil until a cube of bread sizzles immediately. Using a deep frying basket, fry pumpkin in batches until golden. Drain and place on kitchen paper. Just before serving, return pumpkin to the basket. Deep fry until dark golden and crisp. Drain well. Serve immediately with Sweet Chilli Sauce.
