Tomatoe & Basil Squares

Low protein Bread cut into quarters.

2 cloves of garlic, crushed (optional)

3 tomatoes, finely chopped

1 small spanish onion, finely chopped

1/4 cup chopped fresh basil

black pepper to taste

balsamic vinegar

Brush bread slices liberally with combined oil and garlic (optional). Arrange on an oiled baking tray. Bake in a very hot oven for 10 minutes or until bread is beginning to brown.

Combine tomatoes, onion, basil and pepper in a small bowl. Top bread bases with tomato mixture. Drizzle with any remaining oil mixture and balsamic vinegar.
