Hot Tomato Salad
1 tblspn oil
1 tblspn chopped fresh basil (or 1/2 tspn dry basil)
Peel tomatoes, chop roughly; peel and chop onions. Heat oil in pan, add onions, cook until the onions are transparent. Add tomatoes, stir over medium heat until tomatoes are heated through. Remove from heat, stir in basil and chopped shallots. Season with salt.
