Tomato and Zucchini Salad
1 sprig parsley and basil (or 1/2 tspn each dried) fresh chives
4 tspns oil
1 tblspn white vinegar
1/4 tspn french mustard
1/4 tspn crushed garlic (optional)
pinch of pepper
Cut tomatoes into wedges. Slice zucchini and chop chives, parsley and basil. Cook zucchini in boiling water for 1 minute and drain. Mix zucchini, tomatoes, chives, parsley and basil in salad bowl. Refrigerate while you make dressing.
Salad Dressing: Combine oil, vinegar, garlic, mustard and pepper in a screw top jar and shake well. Add dressing just before serving. Serves 4.
