Baked Stuffed Onions

10 onions, peeled

1/2 cup low protein fresh breadcrumbs

1 tomato, peeled and chopped

1/4 tspn dried basil

2 tblspns chopped chives

Cook onions in simmering water for 5 minutes or until just tender then drain. Using a small pointed knife, remove the centre core. Combine all remaining ingredients. Fill each cavity with the stuffing. Brush a baking dish with oil. Add onions. Bake at 220°C for 30 minutes.
