Fresh Herb Dip

30g butter/margarine

2 spring onions, chopped

2 garlic cloves, crushed (optional)

1 tspn sambal oelek

2 tblspns chopped basil

2 tblspns chopped parsley

2 tblspns chopped mint

1 cup mayonnaise

1/2 cup thickened cream

Melt butter in small pan, add spring onions and garlic, stir-fry over medium heat until soft, cool. Combine spring onion mixture in a medium bowl with sambal oelek, basil, parsley, mint, mayonnaise and cream. Serve with low protein herb crackers.
