Chewy Apricot Roll-up
1kg apricots
2 tablespoons water
Peel apricots and remove stones. Combine fruit and water in large saucepan, bring to the boil, reduce heat, simmer, covered, until soft and pulpy and as much liquid as possible has been evaporated; time will depend on ripeness of fruit. Stir often to make sure fruit is not burning. Leave Fruit to cool for about 10 minutes, then spread evenly into foil lined 25cm x 30cm Swiss Roll pan. Dry fruit in a very slow oven with door slightly ajar, until fruit is dry to touch and without any trace of stickiness. Cool to room temperature, peel away foil. Roll 'Roll-up' for easy storage. Fruit can also be dried in direct sunlight. Cover fruit with a net to protect from insects. If roll-up takes more than a day to dry, bring it inside at night.
