Carrot & Potato Pancakes

1 medium carrot

2 large potatoes

1 small onion

1 egg equivalent

pepper to taste

oil for shallow frying

 

Peel carrots, potatoes and onion, grate the carrot, potato and onion.

Mix carrot, potato and onion together in a bowl. Use a fork to beat the egg equivalent. Add egg and pepper to carrot mixture, mix well. Heat oil in frypan. Spoon carrot mixture into the pan, flatten to make a big pancake or make several smaller pancakes. Cook over low heat approx. 15 mins or until browned. Flip the pancake(s) over and cook further 10 mins.
