Chilli Corn Fritters

2 cups Lofprofin Flour

1 tspn baking powder

salt and pepper to season

1 tspn ground cumin

2 egg equivalent

1/2 cup Sweet Chilli Sauce

1/2 cup Water

2 cups Sweet Corn

1/4 cup fresh coriander or parsley chopped

1 tblspn butter for pan frying

 

Sift the flour, baking powder, cumin, salt and pepper into a bowl and make a well in the centre.

Mix together the egg equivalent, Sweet Chilli Sauce, water, Sweet Corn and coriander or parsley with a good seasoning of salt and pepper. Stir into the flour gently.

Heat a tablespoon of butter in the frying pan, and, when hot, cook about 2 to 3 tablespoons of the mixture at a time. Once bubbles form on the top of the fritter, flip and cook the other side for a further 2 minutes, or until cooked and tender.

Repeat with remaining mixture adding more butter to the pan as required.
