Herb Carrots
3 medium carrots, peel & cut into thin matchstick lengths.
Steam or microwave carrot sticks until just tender. Do not overcook. Add 20g butter and 1 tblspn finely chopped herbs or 2 tspns dried mixed herbs. Toss until well coated and butter has melted. Season to taste with salt and freshly ground black pepper. Serve hot.
