Lyn's Pancake Mix

2 3/4 cups (300g) Loprofin Flour

1/3 cup (64g) sugar

1/3 cup (34g) coffeemate

1 tspn baking soda

2 tspns baking powder

 

Mix all ingredients together and put in an airtight container.

Makes 3 1/2 cups mix.

To make three pancakes: Measure 1/2 cup (60g) mix into a small bowl. Add 4-5 tablespoons water and mix well. Pour onto hot griddle with a little free margarine. Cook until bubbles appear and edges are slightly set. Turn once and brown other side.

OR

To make French Toast: Thin pancake batter with water until it is like cream. Dip low protein bread in batter and fry both sides in free-margarine until golden.

The above mixture is ideal when travelling, for snacks, breakfast or as a dessert.
