Vegetable Kebabs
440g can pineapple pieces, drain and reserve juice
1 green capsicum, chopped into cubes
1 punnet cherry tomatoes
1 onion, chopped into cubes
1 zucchini, sliced
10 mushrooms, cut in half
2 tblspns Soy Sauce
Approx. 10 wooden skewers
Place wooden skewers in water and soak for approx. 1/2 hour. Mix together soy sauce and 1/3 cup pineapple juice. Thread kebabs with pineapple, capsicum, tomatoes, onion, zucchini and mushrooms. Pour juice mixture over kebabs and allow to stand for 1/2 to 1 hour. Grill or BBQ for 8-10 minutes turning once or twice.
