Vegetable Stir-Fry

2 spring onions, finely sliced

250g broccoli, cut into small florets

1 medium red capsicum, cut into thin strips

1 medium yellow capsicum, cut into thin strips

150g button mushrooms

1 1/2 tblspn oil

1 clove garlic, crushed (optional)

2 tspns grated ginger, (optional)

1 tblspn soy sauce

1 tblspn honey

1 tblspn sweet chilli sauce

NOTE: The above vegetables are a guide only. Other vegetables could also be used.

 

Heat oil in a work or large frying pan. Add garlic, ginger and onions. Sitr-fry over medium heat 1 minute. Add broccoli, capsicum and mushrooms. Stir-fry further 2 minutes or until vegetables are bright in colour and just tender. Combine soy sauce, honey and chilli sauce in a bowl. Mix well. Pour sauce over vegetables, toss lightly to combine. Serve immediately.
